I made some once, used it in vinaigrettes for various salads. It was nice with avocado and strawberry salad, green salad, tomato salad. Back then there was a fashion for fruity hollandaise sauce with fish, which was okay but I don't think I'd bother now.
If it's not too acidic you could drip a bit on to strawberries or other fruit.
